Spinach and Goat Cheese Quiche:
-Ingredients:
- 1 frozen pie crust
- 1/2 cup (4 oz) crumbled goat cheese (I used garlic and herb goat cheese to add extra flavor)
- 1 cup fresh spinach (chopped)
- 4 eggs
- pinch salt
- pinch nutmeg
- 2 cups whole milk or 1 cup heavy cream
- Coat bottom of pie crust with goat cheese and spinach.
- In a large mixing bowl, mix remaining ingredients. (Beat eggs BEFORE adding other ingredients)
- Pour egg mixture over dry ingredients in pie crust
- Cook at 350 for 40-45 minutes
